Tomatoes in their own juice for the winter: ingredients in a 3 liter jar

  • 3 kg. small tomatoes
  • 2 kg. large tomatoes
  • 60 g of salt (2 tablespoons or 6 teaspoons without slide)
  • 50 g of sugar (2 tablespoons without slide).

As a seasoning you can use cinnamon or a few peas of allspice.

Small tomatoes should be washed, make holes in several places with a needle, tightly put in clean jars until narrowed. If you plan to use these tomatoes for sauces, and not just as a snack, you can peel them by immersing them in boiling water for a few seconds.

Large tomatoes should be cut and heated in an enamel pan under the lid, without bringing to a boil.

Rub the hot tomato mass through a sieve, you will get tomato juice. Dissolve salt and sugar in it at the rate of 1 tablespoon of salt and 1 sugar per 1.5 liters of juice or 2 teaspoons of salt and sugar for every 500 ml of juice. Add a pinch of cinnamon to 0.5 liters of juice.

Boil the juice, remove the foam. Pour boiling juice over tomatoes in jars. Sterilize (jars with a capacity of 1 liter) in boiling water for 8-9 minutes.

Close the lid (roll up) in a glass jar. Flip over.

Wrap until cool.

If you do not grind tomatoes through a sieve, it will be delicious to add garlic and allspice to the juice. If rubbed, it is better to limit yourself to cinnamon or do not add anything but salt and sugar, so that the consistency remains uniform.
